The Oransi was at the top of a list we found when researching the best air purifiers. We hadn't heard of the brand before but took a chance. It had everything we wanted: a tower model with a HEPA filter, advertised to be quiet, it also had the additional feature of a UV light that also kills bacteria. There is a secondary filter system, above and beyond the HEPA that you can wash regugularly as well.

Breville BES840XL the Infuser Espresso Machine Review

Bottom line: I was expecting the Double Boiler to blow the BES840XL out of the water when it came to shot quality. That was not the case at all. While the milk texturing capability of the 840 is a pale shadow of the DB, and it lacks the multitude of convenience features of the DB, the 840 absolutely holds its own with regards to shot quality.

Full review:
I've been using the Breville Double Boiler espresso machine for nearly a year and have been very pleased with it. I was hesitant at first, but great shots and the many, many convenience features won me over. So, when the opportunity came up to compare their top of the line Double Boiler (DB) with their new machine (I'll call it the 840) I thought it wouldn't be a fair fight. Well, I was wrong.

I've never been a fan of thermoblock machines since the temperature stability is just not there. Breville seems to have solved that using two methods. First, the thermoblock is really a thermocoil -- it's a solid block of metal that has two channels machined through it: one for water, the other for the heating element. Cold water enters at one end and emerges heated at the other. They also added a PID for temperature control. Collectively, these techniques produce excellent temperature stability for shots, and very fast recovery time.

The machine itself is classic Breville design -- lots of stainless and high quality plastic. It has a small footprint, and looks much like the baby brother of the DB.

But it's the shots that count. I started with an easy test: Lavazza Super Crema. It's not a high-end bean, but tasty, and one that I've found is very forgiving of less than perfect prep. After a few test shots to get the new machine dialed in, I pulled a double shot from both machines. I could not taste the difference. Did it again and had others taste it, and they agreed with me -- no appreciable difference in taste, mouth feel, crema, you name it.

The next test was a little more challenging -- Lavazza Dek decaf. Decafs in general are (to my palette) more sensitive to temperature variations, and the Dek is especially sensitive. Again, both machines produced the same quality shot. The 840 seemed a just a bit less consistent when I did back-to-back shots quickly, but the difference was very minimal.

My final test was with one of my favorite beans - Red Bird. This is where I did taste a difference between the 840 and the DB, but it was subtle. The shot from the DB was more creamy and full-bodied. But the 840 shot was quite good as well. The small differences became almost nil when I made Americanos from Red Bird.

For my tests I used my Baratza Vario grinder for both machines. While I have a Breville Smart Grinder it does not pair well with the DB (although it is excellent for any non-espresso use). I tried it with the 840 and got better results, but still much prefer the Vario to the Smart Grinder for espresso. Still, the 840 appears more tolerant of lower-level grinders. I also found I needed to go slighly coarser with the grind for the 840 than the DB.

The DB does pull ahead strongly in two areas -- milk foaming and convenience. The thermocoil just can't match the steam production of a dedicated boiler. It did a decent job with milk (albeit with the annoying thump-thump-thump sound that every thermoblock design makes), but it was much slower than the DB and the steam was a lot wetter. Functional, but not at all impressive.

As expected given the price, many of the DB's convenience features are not found on the 840. However, the 840 does have a few of the DB features such as a dedicated hot water dispenser. This is operated with a knob (turn one way for steam, the other for hot water). It splatters more than the DB when dispensing, but the temperature is spot on: I got 197 with the 840 and 197.5 with the DB (same thermometer held in the water stream for 10 seconds).

The 840 also appears to have the same excellent quality head gasket as the DB. The portafilter is well made, although I was really disappointed to see that it was 54mm, which means I can't use my 58mm VST baskets, tamper or the bottomless portafilter I have for the DB. The included tamper is decent quality, and stores easily in the machine. The shot volume is programmable and can be overridden in manual mode. It has a three-way valve so you can backflush (plus it keeps the puck dry). It has an automated cleaning cycle and a "clean me" light, which is handy.

Misses are often related to convenience issues. I wish it was a bit heavier or had better gripping feet, since it's relatively easy to jar when you're putting on the portafilter. A bigger water tank would also be nice. The thing I missed the most was a water level indicator. I didn't expect it to have all the bells and whistles of the DB, but no water level indicator? That seems to be a basic feature that should have been included.

My concerns are two-fold. Breville does not seem to have mastered the reliability issue with their espresso machines. I'm on my second DB, and it is again starting to act up. The Breville customer service has been great in replacing machines, but I'd rather not have to deal with that at all. Plus, with only a one year warranty and no local service centers, I don't have the warm fuzzies about getting years of service out of either of these machines.

My second concern is about scale build-up. It's harmful in any machine, but truly deadly in a thermoblock/coil design. Breville includes their water filters (the same as with the DB) and recommends a descaling every month and a filter change every 2 months. The fact that they are taking such precautions tells me that they are concerned as well. If you get this, don't skimp on descaling!

But those concerns aside, I'm really impressed with the performance of this machine given the price. While it is not perfect, it holds its own where it counts: what's in the cup. This is definitely a machine that should be on your short list in the under $600 category - don't let the thermocoil design scare you off in favor of a SBDU design. At this price point it's a 5-star machine. I'll update this should reliability issues warrant a revision in the score.

Hamilton Beach 63220 Eclectrics All-Metal 12-Speed Stand Mixer, Sterling Review

I purchased this unit just over a month ago. It arrived in less than a week. I've had no problems with it yet. It is truly all metal except for the splash guard/ingredient chute. To address some other reviews that had me concerned. The head doesn't slap around. That is a warranty issue for her. It does walk with big stiff dough recipes such as a two loaf all wheat. Simple physics, considering size and weight, tells you at medium to high speeds it will. Kinda lets you know it is a powerful electronic speed controlled mixer. I can easily steady the base for the few seconds to finish mixing. All other mixing jobs are done with ease. I, personally, like the tilt head. All stand mixers will require side scraping with some recipes, even the expensive KitchenAids. Although I made a five bar cheesecake yesterday and as I was watching the eggs, dropped in at the side one at a time, they were all fully captured and mixed in. I usually scrape once at the beginning and it spins into a dough ball at the end anyway. There is a dimple at the bottom of the bowl to help pick up added flour during the mix. Speaking of KitchenAid, have you read the reviews of those "attachments"? Besides being expensive they say all of them suck. It seems you can buy better and cheaper items to do the same thing taking up the same amount of space.

So far I've made 4 loaves of baguettes, 4 loaves of wheat, 2 loaves of sourdough, numerous cakes, batches of cookies, and of course a large cheesecake since I've had it with no problems. (Now you can see why I needed a strong stand mixer! My church loves me now too!) The key is to read the instructions more than once to ensure you understand how to operate this model. It has some cool recipes in there too! And yes, it is very easy to clean as well.

If you want a mixer to crank out mega-loaves of all wheat bread daily, (commercial), then this is not it. If you want to make great bread, dishes and pastries for your family then this can't be beat at this price range with this much power. After all, as one consumer already stated, this is a "Consumer Reports best buy". I've had a Sunbeam Heritage, (like the one shown on the Cookin In Brooklyn show), and contrary to popular belief there is NOT a motor under the bottom pedestal. It's great for everything else but gluttonous bread dough's. A white loaf every once in a while, maybe. But, I wanted to be more artisan and organic with my breads so I upgraded.

Note: the short time I've had it is the only reason I've given it 4 stars. For me, longevity counts as one star.

WonderMill Grain Mill Review

Let's start right with - I LOVE my WonderMill! I also have a hand-grinding mill (Back to Basics) that I have used, but decided to look around for an electric mill, because even though the B2B is great, my hands and arms got tired, quick. Have no fear though, I'll keep the B2B for when the power is out, or we go camping, it does a great fine grind. So, I did some research, and then I saw and read some comparison tests. Well, I chose the WonderMill.

Just to clear up some things:

YES, you can turn off your WonderMill in the middle of grinding. Whether you can do this with the older models, I don't know, but the newer models you can. The manual still states (shown below) that it 'should' never be turned off, but if you go to the video link that I included, John shows you how to do to it. The manual has not been updated, per phone call.

Here is the information from the manual:

"You should NEVER SWITCH OFF your mill during its milling cycle. Wait
until it has finished milling all of the grain in the hopper before stopping.
Starting the mill with grain in the hopper or stopping the mill while it is in
process may cause your mill to clog up with flour. If you wish to mill a small
amount of flour just add a small amount of grain.

If an emergency occurs and you must turn off the mill before the hopper is
empty, turn the texture knob to the far left, pastry setting (11 o'clock), then
switch the mill off. To restart the mill, remove all grains, hold mill firmly and
shake mill upside down while tapping one side of the mill, readjust the texture
knob to the coarse position, then turn the mill on. If the mill only hums - Do
NOT continue to try to run the mill. Call the Service Center for
Assistance at 208-234-9352."

I also called the company itself, to make sure that when I wrote my review, that I was stating accurate information, and I was told: for older models, the information in the written manual is correct - but they have done more testing, and have found that NO, you do NOT have to turn the machine upside and empty out the hopper, and NO, you do NOT have to turn the texture knob to coarse before turning it back on. I also asked about the video showing John putting the wheat berries in the hopper before turning it on and was told it is better if the machine is empty when turned on, but that it was okay if you had grain in it.

So... if you need to turn off your grinder to run to the bathroom (please, wash your hands before coming back ;o)) or grab the phone that is ringing, or answer the doorbell... well, you can.

Loudness of the grinder: yes, it is very loud - when empty. Presumably though you won't be running it for too long with the hopper empty, then it quiets down some while grinding and stuff is hopper, as it empties it gets louder again. For myself this is not a problem, especially after grinding up Parmesan cheese chunks in my food processor. If you've ever done that, you know what I mean. :o)

Which brings me to next point: when you first go to turn it on - hold onto it - maybe it's just mine, but it jumps a little. Once it gets going it's fine, but just so you know. Also, be prepared for when the hopper empties out, that 1 or 2 grains might try to escape by flying out. ;o)

As far as getting the lid off the flour canister, I agree, it originally was a pain, but, I learned a trick. Hopefully, it will work for others, and not just on mine: I turn the canister so that the part with the curved flour tube is pointed AWAY from my body and pull up on the tab that is located by the tube while my other arm is wrapped around the canister - then I have a much easier time getting lid off. As I said, hopefully that will work for others. I don't know why it works on that particular tab for me, but it does. Don't ask me why. And yes, push down on all sides to make sure that it is firmly attached before turning on machine, push down with both hands firmly until you hear loud click - I learned that lesson very well.

Here are some things to hopefully help others when they get their machine:

When you first get your mill, you're told to run at least 2 cups of wheat or other hard grain, well, I wasn't willing to throw away good wheat, so, I used rice instead, and did 3 cups, just to be safe. No problems. It was also a good way to test the texture settings for me.

The curved flour tube does NOT come off and does not pull straight out sideways! It becomes easier to move with usage, but first time might be a little tough. I'm right handed so here is how I do it: place my left hand, flat, on top of canister with tube side facing right, I take my thumb and hook it just into the hole and lay my forefinger along the side of tube for stability, and gently pull up and around. Basically you will be 'flipping' the tube horizontally, without removing it.

When I first got machine, I hand washed all that could be washed, and wiped down the hopper part, then I milled my first grind, which was the throw-a-way rice, when you go to grind, make sure that the filter is on the machine and that you put the separator cup back on correctly (line the flat side of cup up with flat tab - I used a marker and made alignment arrows for ease). I forgot that first time, and made giant mess. Just an FYI. Another reviewer talks about lining the canister with plastic bag and that it helps with clean up - I have not tried that, but it sounds like it would work, I'll add addendum when I try it next week. Just ground up 6 cups of wheat so won't need more until then.

Hope that this review helps someone else and clears up a little of the confusion that seems to be around about this machine.
